Cooking TipsHow to grill corn on the cobs faster in the ovenI love corn on the cobs and have been grilling them in the oven for a while. Grilling them in the oven is perfect if you live in an apartment where you are not allowed to have a BBQ grill outdoor. I used to bake the corns in the oven and it took a while to fully cook them and have the crispy exterior on them. Several years ago, I found a shortcut to cook them faster in the microwave before grilling it in the oven. Even though it is a 2-step process, it is still faster than grilling them the whole time in the oven because the microwave does the bulk of cooking. The oven leaves crispy exterior on the corns. The corns cooked with the 2-steps come out juicy with crispy exterior. They taste really good. Here are the procedures to do that. First, we will cook the corns in the microwave. To do that, do not remove the corn husks. The corns will be cooked in them and this is the reason why the corns stay juicy because the husks trap the moisture during cooking. Using scissors, trim the top of the corn husks to remove the hairs and husks exceeding the top end of the corn. I normally trim it little by little until I can feel that the husk is right at the tip of the corn. At that point, stop trimming it because we don't want to waste the corn and expose the corn making it less juicy after cooking. Trimming the top also makes the corn shorter and thus, it will not hit the walls while rotating in the microwave. Place 1 corn on an angle on the rotating plate of microwave so that 1 end is close to the inside edge of the plate while the other end is close the other inside edge of the plate. If you put the corn in an angle, any part of the corn will not be outside of the rotating plate. The reason we don't want any part of the corn outside the rotating plate is because when the plate rotates, it will hit the wall causing the corn to move during cooking which results in uneven cooking. If you have more than 1 cob to cook, place the second one using the same method. Because the plate is round, 1 end of the new cob will meet with the other end of the cob. Cook the cobs for 3 min. Once they finish, remove the corns and set them aside to cool down. If you have more cobs to cook, repeat the same procedures for the remaining cobs. Once the cobs are cool to handle, remove the husks. Second step is to grill the corns in the oven. Place the oven rack to about 20 cm (8") from the top of the oven heating element. If you put the rack too far down, it will take longer to grill them. Set the oven to broil at high. Line baking sheet with Aluminum foil for easy cleaning. Place all cooked corns on the baking sheet. Spread room temperature unsalted butter on each side of every corn. Sprinkle a little bit of salt on the corn. Place the baking sheet with the corns on the top rack in the oven. Cook until the top of the corns become brown. Keep an eye during broiling or otherwise, you may end up with burned corn. Once they become brown, remove the baking sheet from the oven and turn over the corns so that the other side of the corns can be broiled and become brown. Place the baking sheet back in the oven. Repeat until all sides have become brown. The longer you broil the corn, the crispier it is and the darker brown it becomes but you may end up with burned corn if you put it too long. Once all sides are brown, remove the baking sheet. Serve the corns while they are still warm. I like to put extra butter while they are still warm. Enjoy! For other cooking tips: click here. |
