Udang Goreng Mentega (Shrimp with Sweet Butter Sauce)

Udang Goreng Mentega (Shrimp with Sweet Butter Sauce) is so easy to make and it tastes good. It doesn't need too many ingredients. However, 1 of the ingredients is sweet soy sauce. If you are not Indonesian, you probably don't have it in your pantry. I suggest you to buy it since it is used a lot in Indonesian cooking and goes well with a lot of things. In addition, you can use it as a marinade for BBQ. In Indonesia, it is also used as condiment to drizzle on top of soto ayam, ketoprak, satay, etc.

You can either use shelled shrimp or peeled shrimp. It is normally cooked with shelled shrimp in Indonesia. The reason is because the shells will keep the shrimp juicy and not dry. However, some people may prefer peeled shrimp because it is easier to eat.

Once the shrimp is cooked, it will be placed on top of thin sliced cucumber. The hot butter sauce pour on top of the cucumber will cook the cucumber slightly but it will still maintain the crispiness of the cucumber. Thus, the taste of the butter and texture of cucumber complement each other.



Ingredients:

  • 1/2 lbs of shrimp, deveined with tails and shells left on
  • 4 tablespoons sweet soy sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 medium size of cucumber, thinly sliced
  • 2 tablespoons of butter
  • 1 lime

Methods:

  1. Mix 3 tablespoons of sweet soy sauce with 1 teaspoon of salt and 1 teaspoon of pepper on a plate. This will be used as a marinade for the shrimp.
  2. Coat the shrimp with the marinade and leave it for 30 min.
  3. Put the thin slices of cucumber on the serving plate
  4. Heat the pan on medium high heat. Cook the shrimp until it becomes pink. Do not overcook the shrimp.
  5. Put butter on top of the pan and let it melt.
  6. As soon as it melts, add 1 tablespoon of sweet soy sauce. Mix it well with the butter and shrimp and taste it. Add salt and pepper if needed. Once the soy sauce has mixed well with the shrimp and butter, pour it on top of the cucumber.
  7. Squeeze the lime on top of the shrimp. Serve it with warm rice.
