Udang Goreng Kunyit (Stir Fried Shrimp with Turmeric)

Udang Goreng Kunyit (Stir Fried Shrimp with Turmeric) recipe is based on my mom's recipe. Growing up, she used to make it and I can understand it why she liked to make it. It is easy to make and delicious. The shrimp is not peeled before cooking. You still have to devein the shrimp but not peeling the shrimp before cooking save you time. In addition, the shell keeps the shrimp juicier after cooking.
If you are not familiar with turmeric, it looks like ginger and is actually considered as ginger family. However, it has different flavor than ginger. It tastes earthy. In this recipe, I use turmeric powder because it is easier to find in Asian stores. Turmeric gives yellow color to food and it can stains your fingers and clothes. Turmeric is used a lot in many Indonesian dishes.
Udang Goreng Kunyit is good to serve with warm rice. So, I always eat it with rice. I cook the shrimp with onion as a vegetable but you can also use sliced bell pepper if you like vegetables.
The recipe serves 4 people.
Ingredients:
- For shrimp rub: 1 teaspoon turmeric powder
- For shrimp rub: 1/4 teaspoon salt
- 20 jumbo shrimp, deveined. Do not remove the shells and tails.
- 1.5 tablespoons vegetable oil
- 2 small size shallots, sliced
- 2 cloves of garlic, minced
- 1/2 small size onion, sliced
- 1/2 teaspoon sugar or to taste
- pinch of salt or to taste
- pinch of black pepper or to taste
Methods:
- To make shrimp rub, mix 1 teaspoon turmeric powder with 1/2 teaspoon salt in a small bowl. Use a fork to mix the rub because turmeric can stain your fingers.
- Place shrimp into a bowl. Add shrimp rub into the bowl. Using a fork, mix the rub with the shrimp so that it is coated with the rub. Do not use your hand to mix the rub because turmeric stains your fingers. Set it aside for 10 min.
- After 10 min, heat vegetable oil on a pan over medium high heat. Add shallots and garlic into the pan. Saute until it becomes fragrant and shallots become soft. Add shrimp and onion into the pan. Once the bottom side of the shrimp has turned pink, flip the shrimp to the other side and cook until it is fully cooked and onion becomes soft. Add sugar, pinch of salt, and pinch of black pepper. Stir to mix the seasoning. Taste it and add more seasoning if needed. Remove from the heat.
- Serve with warm rice.
