Udang Acar Asam Manis (Pickle Sweet and Sour Shrimp)

Udang Acar Asam Manis (Pickle Sweet and Sour Shrimp) is so easy and quick to make and yet delicious. My friend introduced me to this dish long time ago and I have been making it ever since. It becomes my go-to dish to make whenever I am busy and want a home-cooked meal. To save time, I use frozen shrimp which has already been peeled and deveined. The pickles add freshness and sweet and sour flavor to the dish.

The dish is good to serve with warm rice. However, if you like noodles, you can substitute with noodles.

The recipe serves for 2-3 people.



Ingredients:

  • For pickles: 1/4 medium size yellow or white onion, thinly sliced
  • For pickles: 1 cucumber, peeled and cut into match stick (julienned)
  • For pickles: 1 carrot, peeled and julienned
  • For pickles: 1 lime
  • For pickles: 2 teaspoons sugar or to taste
  • For pickles: pinch of salt or to taste
  • 1.5 tablespoons vegetable oil
  • 1 medium or 2 small size shallot, minced
  • 3 cloves of garlic, minced
  • 3/4" ginger, peeled and grated
  • 16 XL shrimp, peeled and deveined
  • 1 green onion, sliced
  • 1/2 tablespoon sugar or to taste
  • 1/2 teaspoon salt or to taste
  • pinch of black pepper

Methods:

  1. To make pickles: Place sliced onion, cucumber, and carrot in a bowl. Squeeze lime into the bowl. Add salt and sugar. Mix the pickles ingredients. Taste and add more sugar and salt if needed. Keep it in the fridge.
  2. Add vegetable oil into a pan. Heat the oil over medium high heat. Add minced shallot and garlic into the pan. Saute until fragrant. Add ginger into the pan. Saute for about 30 sec. Add shrimp and cook until it turns pink. Add green onion, salt, sugar, and black pepper. Stir to mix. If it is too dry, add 1 to 2 tablespoons of water. Taste and add more seasoning if needed. Remove from the heat.
  3. Serve with warm rice and pickles.
