Teriyaki Meatball

Teriyaki Meatball recipe I used is based on a very old Better Homes and Gardens' recipe to make hamburger. Someone gave me a copy of the recipe recently. Instead of using it to make a burger, I decided to make meatballs. To complete it, I searched a homemade teriyaki sauce on the internet. I found the teriyaki sauce recipe from Damn Delicious website. I modified the sauce recipe a little bit. I did't use water at all for the sauce. These meatballs are perfect as an appetizer or to serve as a meal with rice.
The recipe makes about 19 meatballs.
Ingredients:
- For meatball: 2 large eggs, lightly beaten
- For meatball: 1.5 lbs ground beef
- For meatball: 1.5 cups bread crumbs
- For meatball: 1/4 cup chopped onion
- For meatball: 3 tablespoons soy sauce
- For meatball: 2 cloves of garlic, finely minced
- For meatball: 1/4 teaspoon finely grated fresh ginger
- For meatball: 1/4 cup water
- For meatball: 2 tablespoons sugar
- For Teriyaki Sauce: 1/4 cup soy sauce
- For Teriyaki Sauce; 1/4 cup brown sugar, packed
- For Teriyaki Sauce: 1/4 teaspoon garlic powder
- For Teriyaki Sauce: 1/2 teaspoon ground ginger
- For Teriyaki Sauce: 1 tablespoon corn starch
- For Teriyaki Sauce: 2 tablespoons honey
- Optional: toasted sesame seeds
- Optional: 1 green onion, sliced
Methods:
- Preheat the oven to 350 deg F.
- Place beaten egg, ground beef, bread crumbs, onion, soy sauce, garlic, ginger, sugar, and water in a bowl. Mix them until well combined.
- Line baking sheet with Aluminum foil for easy clean up.
- Shape the meatball into ball of 1.25 to 1.4" diameter and place it on the baking sheet.
- Bake the meatballs in the oven for about 20 min or until they are cooked. Once the meatballs are cooked, take the baking sheet out of the oven and turn off the oven.
- While baking the meatballs, combine all the teriyaki sauce ingredients in a small pot. Whisk to combine the ingredients. Turn on the stove to medium. Place the pot on the stove. While cooking the sauce, whisk the sauce from time to time. Turn off the stove when the sauce has slightly thickened.
- Serve the sauce on the side by pouring the sauce on a small ramekin. Sprinkle sesame seeds and sliced green onion on top of the meatball and the sauce.
