Sardencis dengan Saus Tomat (Sardines in Tomato Sauce)

Sardencis dengan Saus Tomat (Sardines in Tomato Sauce) is one of my easy recipes. It is a one pot meal. It is also very inexpensive. My mom used to make it and only used 5 ingredients, not including the vegetable oil and seasonings (salt, sugar, and pepper). She served it with steamed rice. I have since added several ingredients (lemon wedges and fresh parsley) to add freshness but they are optional since from time to time I skip those additional ingredients. In addition, I sometimes serve it with toasted bread instead of rice. I found that the toasted bread soaks up the sauce and since the crusty bread has its own flavor, it reduces the flavor of the sardines. Rice has no flavor, so you can taste the sardines stronger. So, depending on what you like, you can serve it with either or even both.

For the canned sardines, I always use "Sardines in Tomato Sauce" because the tomato sauce adds flavor. I have never tried to cook with other kinds of canned sardines. So, if you use other kinds, you may have to use more tomatoes and add water to get tomato sauce. In addition, if you like the heat, you may want to use more chili pepper. I only use 1 jalapeno pepper since the canned sardines I use already have chili added. If you don't like the heat, you can remove the seeds and ribs of the pepper because that's where the heat comes from.

This recipe serves for 2 people.



Ingredients:

  • 1.5 tablespoons vegetable oil
  • 2 small size shallots, sliced
  • 4 cloves of garlic, minced
  • 1 jalapeno pepper, cut into half lengthwise and diced. If you have low tolerance to heat, remove seeds and ribs of the pepper before dicing it.
  • 2 Roma tomatoes, diced
  • 2 cans of "Sardines in Tomato Sauce Chili Added". I use Ligo brand. There are many different types of canned Sardines. I like the one that has tomato sauce because the tomato sauce adds flavor. I have never tried to cook using other type of sardines (in olive oil, etc.). If you use them, you will have to use more tomatoes and add water to make tomato sauce. The tomato sauce adds flavor. Ligo brand sells 2 kinds of canned sardines, "Sardines in Tomato Sauce" and "Sardines in Tomato Sauce Chili Added". You can use either one of them. You can use more jalapeno pepper if you cannot find with the Chili Added.
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon sugar or to taste
  • pinch of black pepper or to taste
  • Optional: 1 teaspoon minced fresh parsley
  • Optional: 4 slices of toasted crusty bread. I toast the bread after brushing it with a mixture of olive oil and dried oregano. The oregano adds flavor to the bread.
  • Optional: lemon wedges
  • Optional: steamed rice

Methods:

  1. Place 1.5 tablespoons of vegetable oil on a pan. Heat the oil over medium high heat. Add shallots, garlic, and jalapeno pepper into the pan. Saute until shallots become soft. Add tomatoes into the pan. Stir fry the tomatoes until they become soft. Open the sardines cans and pour everything in the can including the sauce into the pan. Let it cook until the sauce is boiling. Add salt, sugar, and black pepper. Gently stir the sauce so that you don't smash or break off the sardines. Taste it and add more seasoning if needed. Remove from the heat.
  2. Transfer to serving plate. Sprinkle it with fresh parsley. Serve it with lemon wedges and toasted bread or rice.
