Potato Bites

My Potato Bites recipe was inspired by 2 recipes, Twice Baked Potato and Jalapeno Bites. I made Twice Baked Potato and had too much potato filling. So, I used it to make Potato Bites. It tasted really good. So, I decided to make it again by combining the 2 recipes since I thought it needed a little bit kick and freshness from jalapeno pepper. Green bell pepper works, too if you have low tolerance to heat even though you can hardly taste the heat at all when you remove the seeds and ribs of the jalapeno pepper. If you are a vegetarian, skip the bacon.
The recipe makes about 8 potato bites.
Ingredients:
- 2 small size potato, cleaned the skin. Do not peel the skin.
- 1 small size shallot, diced
- 1 tablespoon diced onion
- 1/2 tablespoon vegetable oil
- 2 oz cream cheese at room temperature
- 1 jalapeno pepper, deseeded and diced. If you have very low tolerance to heat, you can replace with 1 tablespoon diced green bell pepper.
- 1 tablespoon chopped fresh chives
- 2 slices cooked bacon, chopped
- pinch of salt or to taste
- pinch of pepper or to taste
- 1/4 cup bread crumbs
- 1 tablespoon olive oil
- For dipping: 2 tablespoons sour cream
- For dipping: 1/2 tablespoon chopped fresh chives
Methods:
- Preheat the oven to 375 deg F.
- Line baking sheet with Al foil. Place the potatoes (skin and all) on baking sheet. Bake the potatoes until it is fully cooked and soft (about 50 min). Once it is fully cooked, take the baking sheet out of the oven. Let the potatoes cool down for about 15-20 min. Set the baking sheet lined with Al foil on the side. We are going to use it to bake the potato bites.
- While waiting for potatoes to cool down, heat 1/2 tablespoon vegetable oil on medium high heat. Add shallots and onion. Saute until they become soft. Remove from the heat.
- Once potatoes have cool down, slice the potatoes into half which makes it easier to peel off the skin using your fingers. Place the peeled potatoes into a mixing bowl. Mash it using potato masher or fork. Add cooked shallots and onion, jalapeno pepper, cream cheese, sliced bacon, and chives. Mix well to incorporate them. Add salt and pepper and mix them. Taste and add more seasoning if needed.
- Preheat the oven to 350 deg F.
- Shape the potato mixture into 8 patties. Coat each patty with bread crumbs. Place the patties on baking sheet lined with Al foil. Drizzle the top of the patties with olive oil.
- Bake the potato patties until they are golden brown (about 15 min).
- While baking the patties, combine sour cream and chives in a small bowl.
- Serve potato bites with sour cream and chives on the side.
