Oriental Chicken Salad with Ramen Noodles

This Oriental Salad recipe is so versatile. You can make it completely vegetarian by removing the chicken from the ingredients in case you are serving it to vegetarians. It was always a hit every time I brought it to a potluck party. It goes better with time, so I always make it a day ahead to get the vegetables marinade with the dressing. If you are making it a day ahead, do not put the ramen noodles, sesame seeds, and almonds until half an hour before serving so that they will not become soft and soggy.



Ingredients:

  • 1 cooked chicken breasts (could leave out chicken to make it vegetarian), cut into bite size
  • 1/2 head cabbage, shredded or chopped
  • 1 bunch green onion, finely chopped (or to taste)
  • 1/4 cup of sliced almonds
  • 3 tablespoons sesame seeds
  • 1.5 packages ramen noodles, choose Oriental flavor since the seasoning package will be used as salad dressing. Do not discard the seasoning. It will be used for the dressing.
  • 1 carrot, julienne the carrot
  • 1 cucumber, slice the cucumber
  • 1/2 cup vegetable oil
  • 1/3 cup seasoned rice vinegar
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 tablespoon soy sauce (could add more depending on preference)
  • 1 tablespoons of sesame oil (could add more depending on your preference)
  • 2 seasoning packets of ramen noodle (Oriental flavor ramen noodles)

Methods:

  1. Mix vegetable oil, rice vinegar, sugar, salt, pepper, soy sauce, sesame oil, and seasoning packets of ramen noodles. Taste it and add soy sauce or sesame oil if you want it more. Set the dressing aside.
  2. Smash ramen noodles but don't make it too small. Bake them in the oven at 275 degree until brown.
  3. Bake almonds at 275 degree until brown.
  4. Bake sesame seeds at 275 degree until slightly brown.
  5. Combine cabbage, green onions, chicken, cucumber, and carrot in a large bowl.
  6. Add dressing and stir to coat. Leave it for about 2 hours or longer so that the flavor will get to the vegetable and chicken.
  7. Just half an hour before serving, add the ramen, almond, and sesame seeds mixture and stir well. Do not put ramen, almond and sesame seeds ahead of time since they will become soft.
