Chinese Mushroom Chicken

Chinese Mushroom Chicken can be found in some Chinese restaurants in US. I like it because it is simple and yet delicious. When I went to college, there was a Chinese restaurant nearby that served it. Every time I went there, I always ordered it. They made the best Mushroom Chicken in my opinion. I must admit that my recipe couldn't top theirs or it could just be a memory of good old days. However, my recipe still tastes good and I make it whenever I want simple and delicious chicken recipe.

This recipe serves for 2 people.



Ingredients:

  • 1 piece of boneless skinless chicken breasts, cut into bite size
  • 2 tablespoons corn starch
  • For sauce: 1/4 cup soy sauce
  • For sauce: 1/4 teaspoon sesame oil
  • For sauce: 1 tablespoon rice wine vinegar
  • For sauce: 2 teaspoons sugar
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 2 teaspoons minced fresh ginger
  • 8 ounces white mushrooms, sliced
  • pinch of black pepper
  • Optional: 1/2 tablespoon toasted sesame seeds
  • Optional: 1 green onion, sliced

Methods:

  1. Place chicken in a bowl. Toss it with corn starch. Leave it for 10 min.
  2. In a small bowl, combine soy sauce, sesame oil, rice wine vinegar, and sugar. Whisk it.
  3. Heat vegetable oil on a wok over medium high heat. Once the oil is hot, add chicken into it and cook it until brown on all sides. Remove chicken and set it aside. Add garlic and ginger. Saute them until fragrant. Add mushroom and stir fry it for about 2-3 min. Add chicken back on the wok. Stir fry it for another 2 min. Whisk the sauce and add into the wok. Add pinch of pepper. Stir the sauce to coat the chicken with the sauce and cook it until the sauce starts to boil. Stir it and cook it further until the sauce starts to slightly thicken. Remove from the heat. Sprinkle with toasted sesame seeds and sliced green onion if preferred.
  4. Transfer it to a serving plate. Serve it with steamed rice.
