Brazilian Cheese Bread (Pao de Queijo)

Brazilian Cheese Bread (Pao de Queijo) is from Brazil. The reason I am posting this recipe is because of the 2016 Olympic. I was watching food show on TV and they were showing food eaten in Brazil. One of them was Brazilian Cheese Bread. In Indonesia, a lot of bakeries sell cheese bread, either single serving or in a loaf and I loved them. So, after watching it, I decided to check out the recipe on the internet. I found out the recipe was pretty simple. However, there was the simplest one which was from simplyrecipes.com, so I decided to follow it. One thing I noticed is the bread doesn't use flour. Instead, it uses tapioca flour, so it is gluten free. When I saw tapioca flour, I was very excited since I had tapioca starch sitting in my pantry for several years and was looking for ways to use it. If you are not familiar, tapioca starch and tapioca flour are basically the same thing. In Asian stores, it is called tapioca starch while the American brands are normally called tapioca flour. Unlike other bread, Brazilian cheese bread doesn't need a mixer and kneading. In simplyrecipes.com, you just need a blender to mix all ingredients. You then need to bake it in the mini muffin pan for about 15 min. During baking, the bread puffs up like cream puffs. The bread itself chewy and gooey in the inside. It is good. However, the bread is not like Indonesian cheese bread since Indonesian cheese bread is not puffy.

To celebrate 2016 Olympic, here is the recipe. I hope you all can enjoy it. You can use any cheese. I used cheddar cheese. You can also add herbs to the ingredients.

This recipe makes about 16 if you use mini muffin pan and 6 if you use regular muffin pan.


  • 1.5 cups tapioca flour or tapioca starch
  • 2/3 cup milk
  • 1/3 cup olive oil
  • 1 egg at room temperature
  • 1/2 cup grated cheese, can be any cheese. I used cheddar cheese but you can use feta cheese, Parmesan cheese, etc.
  • 1 teaspoon salt or to taste
  • butter or olive oil to grease the inside of muffin pan


  1. Preheat the oven to 400 deg F.
  2. Add all the ingredients into the blender. Turn on the blender and process it until the batter becomes smooth.
  3. Grease the inside of mini muffin pan with butter or olive oil.
  4. Pour the batter in the muffin pan and fill up the pan about 3/4 full.
  5. Place the muffin pan inside the oven and let the bread bake for about 15-20 min until it becomes puffy and light golden brown.
  6. Remove muffin pan from the oven and take the bread out of the pan and let it cool on cooling rack.
  7. Serve the bread while it is still warm.
