Bakwan Jagung (Corn Fritters)

These corn fritters are so good that they can make you addicted. This recipe makes about 16 corn fritters. Serve them while they are still hot or warm. They become soggy if you leave them for the next day. To revive them, you can heat them on the rack of the toaster oven and toasted for about 6.5 min.



Ingredients:

  • 1 Large egg, lightly beaten
  • 1 cup kernel corn (frozen or fresh)
  • 1 small onion, chopped
  • 3 green onions, chopped
  • 1 teaspoon of baking powder
  • 3/4 cup of flour
  • 1/2 cup of water
  • pinch of salt or to taste
  • pinch of pepper
  • vegetable oil for frying

Methods:

  1. Make the batter by mixing egg, corn, green onion, onion, baking powder, flour, salt, and pepper together in a bowl.
  2. Add water little by little to the batter and mix it until the batter becomes thoroughly combined while making sure the batter doesn't become too thin. The batter should be thick but not too thick or too thin so that it can be dropped in the hot oil and it can still stay together.
  3. Heat up vegetable oil. Drop a heaping tablespoon of the batter into hot oil. Fry it until brown on both sides.
  4. Take the fritter out using slotted spoon to let the oil drip down and put the fritter on paper towel to absorb the oil.
  5. Serve the fritters while it is still hot with sweet chili sauce. You can buy sweet chili sauce at Asian grocery store or at the Asian aisle of your grocery store. Sweet chili sauce is normally used for spring rolls or egg rolls.
