Ayam Lada Hitam (Black Pepper Chicken)

Ayam Lada Hitam (Black Pepper Chicken) is easy to make and yet delicious. This is one of my go-to recipes when I want an easy recipe. You can find this dish in Indonesia and Malaysia. If you like heat, you can add slices of jalapeno pepper and stir fry it along with the bell peppers and onion.

This recipe serves 3-4 people.



Ingredients:

  • 2 boneless and skinless chicken breast, diced into bite size
  • For marinating chicken: 2 tablespoons sweet soy sauce
  • 2 tablespoons vegetable oil
  • 3 small shallots, sliced
  • 3 cloves of garlic, minced
  • 1/2 small onion, diced into cubes
  • 1 green bell pepper, diced into cubes
  • 1 red bell pepper, diced into cubes
  • 1 teaspoon freshly ground black pepper or to taste
  • 2 tablespoons sweet soy sauce or to taste
  • 1/4 teaspoon sugar or to taste
  • 1/4 teaspoon chicken bouillon or to taste
  • Optional: 2 tablespoons water

Methods:

  1. Place chicken in a bowl. Pour 2 tablespoons sweet soy sauce over the chicken. Toss the chicken to coat it with the sweet soy sauce. Marinate it for 10 min.
  2. Heat 2 tablespoons vegetable oil on a pan over medium high heat. Add shallots and garlic into the pan. Saute until the shallots become soft. Add chicken into the pan. Stir fry the chicken until it is cooked. Take the chicken out from the pan and place it on a plate. Add onion, green bell pepper, and red bell pepper into the pan. Stir fry it until the peppers becomes tender crisp. Add the chicken back into the pan. Add black pepper, sweet soy sauce, sugar, and chicken bouillon into the pan. Stir fry to coat the chicken with the sauce. If the sauce is too thick for your preference, you can add 2 tablespoons of water to thin it. Taste it and add more seasoning if needed. Remove the pan from the heat and turn off the stove.
  3. Serve it with rice.
