Ayam Bakar Kecap (Grilled Chicken with Sweet Soy Sauce)

If you like chicken, you should try this recipe. The spices, sweet soy sauce, and lime juice complement each other. Grilling it brings out the flavor of the spices and chicken.



Ingredients:

  • 5 shallots, roughly chopped. They don't need to be finely chopped since they will be processed in food processor.
  • 4 cloves of garlic, roughly chopped. They don't need to be finely chopped since they will be processed in food processor.
  • 1 inch of ginger, roughly chopped. They don't need to be finely chopped since they will be processed in food processor.
  • 1/2 teaspoon of sambal oelek (adjust quantity depending on whether you want it hot or mild) or 1/2 teaspoon of red chili pepper flakes. I use Huy Fong brand for sambal oelek since they don't add shrimp paste or garlic to it and thus, I got the chili pepper I need without any other flavors I don't want.
  • 2 teaspoons of salt
  • 2 lemongrass stem (white part only, green part is not used), roughly chopped
  • 4 kaffir lime leaves (can be substituted with 1 teaspoon of lime zests if unavailable)
  • 3/4 cup of water
  • 1 teaspoon of pepper
  • 1/2 teaspoon of sugar
  • 3 tablespoons sweet soy sauce
  • 3 pieces of skinless and boneless chicken breasts
  • 2 limes
  • 1 tablespoon of vegetable oil

Methods:

  1. Juice 1 lime and mix it with the chicken and 1 teaspoon of salt. Leave it for 1 hour.
  2. Put the spices: shallots, garlic, ginger, lemon grass, sambal oelek/red chili pepper flakes, and kaffir lime leaves in a food processor. Grind them until they become smooth.
  3. Heat up 1 tablespoon of vegetable oil in a pan. Stir fry the spices with salt and pepper until they become aromatic.
  4. Add water, chicken, sugar, juice of 1 lime, and sweet soy sauce. Make sure the chicken is covered with enough liquid. Cook until the chicken is cooked.
  5. Take the chicken out from the pan. Reserve the liquid spices since it will be used to baste the chicken during grilling.
  6. Baste the grill side with the liquid spices and grill it until you can see the grilled marks. Do the same thing for the other side.
  7. Remove from the grill and let it rest for 5 min.
  8. If you prefer, squeeze another lime on top of the chicken.
