Asparagus and Shrimp in Oyster Sauce

Asparagus and Shrimp in Oyster Sauce is easy to make and delicious. When you see asparagus in your grocery stores, you should make it. My friend used to make this dish long time ago and I liked it. So, I decided to make it at home. It was so easy, so every spring I would buy asparagus and make it. Hers used tomato and asparagus only as the vegetables but I liked the crispiness of the bell pepper that I added it in my recipe. I like my veggies crispy, instead of soft and mushy, so I always cook the bell pepper and asparagus to be tender crisp. If you like them softer, please cook them according to your preference. This dish can be made vegetarian by using tofu instead of shrimp and using vegetarian oyster sauce instead of regular oyster sauce. Serve the dish with warm rice.
This recipe serves 3-4 people.
Ingredients:
- 1.5 tablespoons vegetable oil
- 3 cloves of garlic
- 1 teaspoon minced fresh ginger
- 16 extra large shrimp, peeled and deveined. To make it vegetarian, replace shrimp with 1 12 oz firm tofu and dice the tofu into cubes.
- 1 bunch asparagus, cut into 1.5" long
- 1 bell pepper, diced. I use yellow bell pepper just because of color contrast for the picture. You can use any color of bell pepper.
- 1 medium size tomato, diced
- 1.5 tablespoons oyster sauce or to taste. To make it vegetarian, use vegetarian oyster sauce.
- 1 tablespoon soy sauce or to taste
- 1/4 teaspoon sugar or to taste
- 1 teaspoon sesame oil
- pinch of black pepper
Methods:
- Heat 1.5 tablespoons of vegetable oil on a pan over medium high heat. Add garlic and ginger into the pan. Saute until they become aromatic. Add shrimp into the pan, making sure it is in a single layer. Cook until it becomes pink on 1 side. Flip it over to the other side. Cook until it becomes pink. Remove the shrimp and place it on a plate. Add asparagus into the pan and cook until it becomes tender crisp. Add bell pepper and tomato and cook until bell pepper becomes tender crisp. Put the shrimp back into the pan. Add soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Stir to mix the seasoning with the other ingredients. Taste and add more seasoning if needed. Remove the pan from the heat.
- Serve while it is still warm with warm rice.
