Acar Timun Kuning (Yellow Pickle Cucumber)

Acar Timun Kuning (Yellow Pickle Cucumber) is a side dish. It goes well with beef rendang, fried chicken, etc. You will need candlenuts (kemiri) to make this recipe. You can find them in Asian stores that sell Indonesian items. Candlenuts look like macadamia nuts. The different is you cannot eat candlenuts raw because they are mildly toxic. So, don't let your kids eat them raw. Macadamia nuts also have the same texture and taste as candlenuts. So, you can replace it with macadamia nuts if you cannot find it. If you cannot find macadamia nuts, the next substitute is cashew nuts.

Instead of green beans, you can use 1 bell pepper. Make sure you slice it lengthwise. You can also add cabbage if you prefer.



Ingredients:

  • 1 medium size of cucumber, sliced lenghwise in 2" length and seeds removed
  • 1 carrot, sliced lengthwise in 2" length and 1/6" thick
  • 1 cup green beans, sliced lengthwide in 2" length
  • 2 Thai red chili peppers (optional)
  • 2 cloves of garlic, roughly chopped (it will be processed in food processor)
  • 1" piece of fresh ginger, roughly chopped (it will be processed in food processor)
  • 2 pieces of candlenuts, roughly chopped (it will be processed in food processor)
  • 1 teaspoon turmeric powder
  • 4 teaspoons rice vinegar
  • sugar
  • salt
  • 1/2 tablespoon water
  • 1.5 tablespoon of vegetable oil

Methods:

  1. Grind the spices: garlic, ginger, candlenuts, and turmeric powder in food processor.
  2. Heat up oil on medium high heat.
  3. Saute the spices until they become aromatic.
  4. Add carrot, cucumber, and green beans and saute them until they become slightly soft.
  5. Add Thai chili peppers if used.
  6. Add water, rice vinegar, salt and sugar. Some people prefer it salty but some prefer it sweet, so add salt and sugar accordingly.
